Pear Crisp with Vanilla Ice Cream

Pear Crisp with Vanilla Ice CreamOct. 26, 2009http://farm3.static.flickr.com/2697/4021058264_c9382eb9ae.jpgThis, my darling friends, Romans, and countrymen, is an absolute treat.
I had pears. I wanted to use them for a dessert. I originally intended to make some sort of cheesecake with some sort of caramel pear topping. But I’ve been making a lot of caramely things lately, things like Caramel Apple Pecan Rolls, Apple Cake in an Iron Skillet, etc. And I wanted to change things up.
In addition, I forgot that I’d already gone and eaten all the cream cheese in my house. I HATE it when that happens!
So cheesecake, at that point, would have been a little difficult.
Live and learn.
I wound up making this very simple (but very delicious) pear crisp. Served warm with vanilla bean ice cream, I had to sit on my hands and look at eighties photos of Linda Evangelista to keep myself from eating the entire pan. And it worked. For an hour, it actually worked.
After that, things started to really fall apart.
http://farm3.static.flickr.com/2639/4021039398_a065e7cd06.jpgStart with 4 to 5 pears, the firmer the better since you don’t want them to fall apart when the crisp bakes.
http://farm3.static.flickr.com/2649/4020280781_2964c31d75.jpgPeel the pears using a veggie peeler.
http://farm3.static.flickr.com/2484/4020281039_942d631ee8.jpgCut them in half lengthwise.
http://farm3.static.flickr.com/2716/4021041058_083e8961a5.jpgUse a spoon to scoop out the seeds and hard core.
http://farm3.static.flickr.com/2521/4020282163_4330524d4b.jpgPoifect!
http://farm3.static.flickr.com/2483/4020281273_69faedeb5f.jpgPut the halves face down, then make several slices.
http://farm4.static.flickr.com/3530/4020281581_70fa08c584.jpgCut them in the other direction to dice them.
http://farm3.static.flickr.com/2650/4021041646_776903991a.jpgKeep going until all the pears are diced.
http://farm3.static.flickr.com/2773/4020282723_98032d1e7a.jpg
http://farm3.static.flickr.com/2630/4020283223_8145a9cc83.jpgThrow them into a bowl…
http://farm3.static.flickr.com/2442/4021042698_49b5c73205.jpgWith a nice amount of sugar.
Though any amount of sugar is nice. Evil, mean…and nice.
http://farm3.static.flickr.com/2778/4021043014_c9d75dbcf9.jpg
http://farm4.static.flickr.com/3523/4020284319_df1a09c199.jpgSprinkle in some salt, just to make up for all this sweetness.
http://farm3.static.flickr.com/2462/4021043896_663b02c074.jpgStir it all together, and try not to scarf this down. It’s extremely inviting.
http://farm3.static.flickr.com/2646/4020285349_174ff45a1c.jpgAnd now for the topping, which is the oh, so goooood part. Combine flour, sugar, brown sugar…
http://farm3.static.flickr.com/2735/4020285733_181078f8a5.jpgAnd cinnamon.
http://farm3.static.flickr.com/2780/4020279855_699611dfde.jpgGrab about 1/2 cup pecans.
http://farm3.static.flickr.com/2640/4020286837_4954e4f9a5.jpgAnd chop them up…
http://farm3.static.flickr.com/2612/4021046600_bd67be97a5.jpgThen keep chopping…
http://farm3.static.flickr.com/2506/4020287763_1141b44413.jpgThen chop some more. We don’t want any large chunks of pecans—just a really fine chop.
Chop, chop, chop.
http://farm3.static.flickr.com/2643/4020288179_c3808aed0a.jpgThrow the pecans in with the flour mixture.
http://farm3.static.flickr.com/2721/4020288499_f450111a51.jpgStir it around to combine…
http://farm3.static.flickr.com/2705/4021044408_b7214e5d76.jpgThen throw some butter into a bowl and melt it in the microwave.
http://farm3.static.flickr.com/2708/4021048292_5639731d88.jpgDrizzle it over the flour mixture, stirring it with a fork as you go.
http://farm3.static.flickr.com/2452/4021048644_0960e364a2.jpg
http://farm3.static.flickr.com/2711/4021049026_abf0878333.jpgKeep stirring until you wind up with big, moist clumps.
http://farm3.static.flickr.com/2566/4021049732_dc266ff2b5.jpgNow pour the pears into a buttered baking dish.
Buttered, because you’re worth it.
http://farm3.static.flickr.com/2530/4021050274_21c15940df.jpgNow sprinkle the topping over the fruit.
http://farm3.static.flickr.com/2550/4021050652_788061dfa3.jpgAhhh. Lovely and delicious.
http://farm3.static.flickr.com/2766/4021051354_0e89af876d.jpgThis is looking very promising.
Very, very promising.
And I know these things.
Now, pop it in the oven to bake for a good 30 minutes. After 30 minutes has passed, stick it on the top rack of the oven for an additional 10 minutes, just to get the top nice and golden brown and bubbly.
http://farm3.static.flickr.com/2450/4020293307_db003a69f5.jpgOh, dear. Does this ever smell divine.
http://farm4.static.flickr.com/3508/4021053196_8b21d57429.jpg
http://farm4.static.flickr.com/3521/4021053752_5e9f4a9b44.jpgUh…yeah.
That’s what I’m talking about.
http://farm3.static.flickr.com/2474/4021056116_7b245f3a97.jpgVanilla ice cream. Here’s a recipe if you’d like to make your own:
Vanilla Bean Ice Cream
http://farm3.static.flickr.com/2502/4021056406_e8f9cb9df9.jpgServe it up warm, baby…
http://farm3.static.flickr.com/2543/4021056796_e81705c031.jpg
http://farm3.static.flickr.com/2596/4020298443_cff2061b27.jpgYes. I think this’ll do.
http://farm3.static.flickr.com/2697/4021058264_c9382eb9ae.jpgI think this’ll definitely do.
http://farm4.static.flickr.com/3489/4021059300_997ed03030.jpgYou won’t believe how delightful this is. Such a nice change of pace from the typical (albeit delicious) apple dessert. And you can add some minced fresh ginger to the pears if you want to step the flavors up a notch. In fact, I’m going to do that right now. I have no self control.
Enjoy this! It’s perfect for the holidays.
Pear-Cinnamon Crisp with Vanilla Ice Cream
Filling
4 to 5 large pears (I used Bosc)
2/3 cup sugar
1/4 teaspoon salt
Topping
1 1/2 cups all-purpose flour
1/3 cup firmly packed brown sugar
1/2 teaspoon cinnamon
1/2 cup pecans, very finely chopped
1 stick (8 tablespoons) melted
Preheat oven to 350 degrees.
Peel, core, and dice pears. Place into a bowl and stir together with 2/3 cup sugar and 1/4 teaspoon salt. Set aside.
In a separate bowl, combine flour, brown sugar, cinnamon, and pecans. Stir together. Drizzle melted butter gradually, stirring with a fork as you go until all combined.
Pour pears into a baking dish; top with crumb topping.
Bake at 350 degrees for 30 minutes.
Place pan on top rack of oven for an additional 10 minutes, or until topping is golden brown.
Serve warm with vanilla ice cream.
